Chocolate Chip Cake

do believe that if I made my hubby a yummy dessert once a week, I could stay on his good side forever.  Dessert…the way to a man’s heart.  At least, that’s true at my house, how about yours?IMG_6853

So, I got out this recipe that has been sitting in my recipe files that I have no idea where I got it from.  Looks like I might have cut it out of the newspaper at some point.  I have to tell you, I love a cake that starts with a box mix, don’t you?   And can be cooked in a Bundt pan, that’s extra points.   Sandra Lee would approve of this one.

I hate making layer cakes.

It starts with a yellow cake box mix, but then after adding all those extra special ingredients, it tastes SO homemade.  This one has all the things we love: 

chocolate chips

coconut

pecans

vanilla pudding and even

sour cream.

How can you go wrong with those ingredients?

It’s definitely a keeper and will go in the permanent recipe file.  Delish!! Perfect for the family or a special occasion.

Chocolate Chip Cake

1 Yellow cake mix (I used Dunkin Hines)

1 Small box instant vanilla pudding (I used French Vanilla)

4 eggs

1/2 cup cooking oil

1 (8 oz.) sour cream

1 cup chocolate chips

1 cup chopped pecans

1 cup flaked coconut

Beat cake mix, pudding mix, oil, sour cream and eggs together until well blended, about 3 minutes.  Stir in chips, nuts and coconut by hand.  Grease tube pan.  Pour cake mixture into pan.  Bake at 350* for 1 hour.  Turn oven off, open door and let cake set in pan for 1 hour before removing to cake server.

My hubby was a dessert lover (especially chocolate chip cookies) until he changed his diet for heath reasons. Now I don’t bake quite as much because it’s usually for just my daughter and myself.

I love to bake from scratch… but you had me at Duncan Hines! This one is a definite-I also love using bundt pans-so pretty and no layers! It looks delish!

Tina, yeah, I wish it was that easy. :) He calls me the food police as it is, so if I don’t make a homemade treat occasionally, he’ll just get Hershey bars at the grocery store. Darned if I do & darned if I don’t! Needless to say, the diet isn’t going well, but i do try to help.

Chocolate coconut and pecans, all ingredients of my favorite candy bar, almond joy. When we go to Brusters for ice cream if they have it thats what I get chocolate almond, coconut. Will have to try this recipe soon.

very similar to my recipe….though I use chocolate pudding and add 4 oz grated German (sweet) chocolate….I don’t use the coconut either, but that sounds yummy…..oh and I make a fudge frosting too…..sooooo good!

Yum … I make the one from the lemon cake mix, with lemon pudding and then a lemon drizzle on top, and it is a family staple. I’ll definitely try yours.

In my case, it’s me that stays happy when I have something sweet!! But, with a recent diabetes diagnosis (BOO!) I am having to say no…and it’s not easy. I think I would have to sneak a bite of your yummy cake.

ooh you had me at chocolate chip…..but, lost me at coconut and pecans….sorry, not a fan of either….gotta say though that I could just replace the coconut with butterscotch chips and the pecans with peanut butter chips and maybe have a scoop of vanilla ice cream to cut the “sweetness” just a little…LOL! B:)

Oh,my gosh…YUMMMMMY! My husband is definitely a dessert guy, and loves it when I make something just for him. Neither of us needs the extra calories, but it really is so enjoyable to indulge once in a while, and this is the perfect recipe to use for just such an indulgence! Thanks so much for sharing it…now to get to the store!

This has been one our favorites for many years. I like to make
it especially in the summer time since it doesn’t have frosting
which can tend to slide off in heat of the deep south!

Hi Rhoda! I have this recipe, except we use devils food cake, chocolate pudding, and chocolate chips with an almond-chocolate glaze. It is divine! Richella from Imparting Grace posted this recipe too except she uses cream cheese instead of the sour cream, so it’s obviously a very versatile cake :) I’m going to have to try your version next…yum.
