Southwest Chicken Tortillas

Recently, I spotted a recipe from another blog over here (which is a pretty blog to look at, so go and visit to get the recipe)  and decided to try it at home.  It was a hit with the hubby (and me), so I wanted to share it with you. We love Mexican and this is a great way to get a little Mexican fix at home.  And it’s quick and easy!

I used chicken in mine and just sliced up some fresh chicken breasts and quick sauteed them in a pan and then layered everything and baked it.  I used frozen corn and canned black beans.   It was delish!

I served it in some whole wheat tortillas and they were really tasty.  Added cheese, fresh tomatoes from the garden, and fresh cilantro.

Now that we’re gardeners, we save all our veggie and fruit scraps to add to the garden beds.  I grew up with my parents always doing this and it makes for some rich dirt in the garden.  Just a tip for those of you who grow things, if you don’t know about adding your scraps, great way to compost and get rid of trash, even the coffee grounds.

And, today is my big sissy’s birthday.  Happy Birthday, Renee!  Ahem….she’s 2 years older than me. :)
