Easy and delicious tossed salad with mandarin oranges and candied almonds.
In jar with tight fitting lid, combine dressing ingredients. Shake well. Refrigerate.
In heavy skillet, cook almonds with sugar over medium low heat until sugar melts and coats almonds, stirring frequently. Pour on foil, cool. Break apart if necessary.
In large bowl, combine remaining salad ingredients, except mandarin oranges. Add almonds and orange segments. Pour dressing and toss to combine. Serve immediately.
Multiply recipe for more servings. For additional dressing, just multiply that as well. I used 2 cans of mandarin oranges and doubled everything else to serve 8 people.
