Mandarin Orange Tossed Salad

Easy and delicious tossed salad with mandarin oranges and candied almonds.

Prep Time 30 minutes
Servings 4 1 cup servings

Ingredients

  • 2 cups torn lettuce I used red leaf lettuce & no spinach
  • 2 cups spinach leaves Use your favorite lettuce
  • 1/2 cup sliced celery
  • 1/4 cup sliced green onions
  • 1/2 cup mandarin orange segments 1 small can should work, I used 2 for this salad
  • 1/4 cup slivered almonds I had sliced almonds and used those.
  • 1 1/2 tsp sugar
  • DRESSING RECIPE:
  • 3 TBL Oil I used canola/olive oil mix
  • 2 TBL sugar
  • 2 TBL white vinegar
  • 1/4 Tsp salt
  • 1/4 Tsp hot pepper sauce
  • 1 1/2 Tsp chopped fresh parsley I didn't use fresh parsley

Instructions

  1. In jar with tight fitting lid, combine dressing ingredients. Shake well. Refrigerate.

  2. In heavy skillet, cook almonds with sugar over medium low heat until sugar melts and coats almonds, stirring frequently. Pour on foil, cool. Break apart if necessary.

  3. In large bowl, combine remaining salad ingredients, except mandarin oranges. Add almonds and orange segments. Pour dressing and toss to combine. Serve immediately.

Recipe Notes

Multiply recipe for more servings. For additional dressing, just multiply that as well. I used 2 cans of mandarin oranges and doubled everything else to serve 8 people.
