Stuffed Peppers

I didn’t grow up eating stuffed peppers, it just wasn’t something my mom fixed for us, but hubby said he liked them, so I looked up a recipe online and came up with this one.  Now, I make them quite often and we love them.  Picture 003

I’ve made them with green or red peppers and they are both equally delicious.   You just core them and leave a big enough hole at the top to stuff the mixture down inside before baking. IMG_8496

Boil them for just a couple of minutes to get the cooking process started.

Brown ground beef and onions, add a can of tomato sauce.  I cook brown rice ahead of time and have it ready, add about 2 cups cooked rice, brown or white, your preference.

Stuff the meat and rice mixture inside the peppers and bake.  I add Parmesan cheese to the top and then sprinkle on a bit more once they are out of the oven and all sliced up on the plate. Picture 006These look a little wrinkled, but BOY, are they good.  The flavors are great together.  I don’t even make another side dish with these.  You have rice, meat and peppers all in one dish and it’s very filling and tasty. In this pic, I used some diced tomatoes, cause I didn’t have tomato sauce on hand, but one small can of tomato sauce will work for 3 peppers.

Here’s the recipe from Food Network online.  The recipe calls for more chopped green peppers inside the mixture, but I leave that out.

Mr. John’s Meat-Stuffed Bell Peppers

6 Green Bell Peppers, tops cut away & seeds removed (I only make 3 at a time)

1/2 cup chopped onion

1/2 lb to 1 lb. lean ground beef  (recipe calls for 1/2 pork, but I just used ground beef)

1 TBL minced garlic (I used garlic powder on this one)

1/4 cup finely chopped parsley (I used dried parsley)

3/4 tsp. salt

1/2 tsp black pepper

Pinch red pepper flakes

2 cups cooked rice (I used brown rice)

8 oz. tomato sauce

Directions:

Preheat oven to 350*

In large pot of boiling water, parboil the peppers until tender, 2 to 3 minutes.  Remove and set on baking pan.

In large saute pan or skillet, sautee the onions in a bit of oil, then brown the meat,  cook and stir until meat is browned.  Add all the spices and simmer for about 5 minutes.  Add tomato sauce and rice and stir together well.  Adjust seasoning to taste.

Pour a tiny bit of water in bottom of baking dish.  Stuff bell peppers with meat mixture and place them up in the baking dish.  Bake until peppers are tender about 30 minutes.

I add Parmesan cheese to it and it’s delish!

I love stuffed peppers! The recipe I use is similar to yours (with no garlic) except it calls for shredded cheese in the mixture. I use a sharp cheddar and then add some to the top of the peppers before I put it in the oven.

I haven’t had these since I was a kid. My mom made them but I didn’t like them very much but then again I didn’t like much back then! I am sure I would like them today and need to give these a try. I was not much of a vegetable or green pepper eater back then but love all vegetables now. They look good!

My family loves these and our recipe is the same. I do however serve a side salad with mine. Hubby and I love a good salad.

Interesting Rhoda! My mom used to make them and I made some just recently for an elderly couple from our church. I made enough for hubby and I also. I have never seen them made the way you do though – we always cut the pepper in half and stuff each half. Never boiled the pepper before hand either. But maybe with them cut in half they cook easier? I usually use my meatloaf recipe. I, too, love cheese on top! We usually have a veggie or two with ours, but Heidi has me wanting a salad now! LOL

I do think a side salad would be perfect too. My hubby sometimes gets tired of salads though, so this is a filling meal and I usually just skip the extra veggie.

Rhoda, your stuffed peppers look absolutely delicious! I’ve made them before, and my husband and I loved them. Sadly, I had completely forgotten about them since and haven’t made them again. Thanks for reminding me to pull my recipe back out.

My recipe is very similar to yours – I love the brown rice too! I’ve never par-boiled before. I am going to give it a try. I bet it makes the peppers very tender.

Never had these growing up but when I married in 1980 my husband wanted me to fix them…I had no clue and there was not an internet then…..but I found out from a neighbor of my Mom’s and I have to say, they were pretty good…..problem being, I don’t like the green ones, but the red is a bit sweeter.

I’m glad you enjoyed this recipe. I’m Polish and grew up eating cabbage rolls and stuffed peppers, so this recipe reminds me of my childhood. I make it occasionally and we love it.

HI Rhoda, we love stuffed peppers so I make them alot. My recipe is just about the same. I usually use the diced tomatoes, just like the texture. I also mix 1 can of tomato soup and 1 small can of tomato sauce to use as a gravy over them….YUUUUMMMMM!!!!! XO, Pinky

Your recipe sounds delish, but I have to say, my MIL makes the best stuffed peppers. She cuts them in half sideways, stuffs them, pours tomato sauce on top and we put that over mashed potatoes. She always serves stuffed peppers and mashed potatoes together, always. You know how much we love our carbs up here in Pa Dutch country….lol. Your version is much healthier.

Love stuffed green peppers!

I grew up putting corn in the mixture as well! Gives it a little sweetness. I also put italian breadcrumbs on top of the mixture before it goes into the oven. I think it helps keep the moisture inside the pepper and adds some extra spices. Deliciouss
