Chicken Tortilla Soup

My friend, Kate, shared this soup on her blog awhile back and I had been looking for a good Taco soup recipe and this one fit the bill.  I changed it up a little bit, by adding a bag of frozen veggies, this one above by Pictsweet is perfect for a soup, with all the Mexican flavors already inside. I’ve made it a couple of times and the 2nd time used a rotisserie chicken from Publix, which really made it fast and easy too.

Add some Monterey jack cheese to the top, along with some tortilla chips (homemade or in a bag) and you’re all set.  It’s a yummy, delicious soup, perfect for a hearty meal.  My hubby loves it!

You probably already have a version of this soup, but this one worked great for me.  Click over to Kate’s for the recipe.  I made it just like she listed (with a whole can of diced tomatoes), only I used that bag of veggies above, which I thought was  perfect for this dish and as mentioned, used a whole rotisserie chicken.  Using these items, this dish comes together very fast.

We love Mexican at our house and indulge quite often., how about you?

    It is one of our favorite treats. I have two daughters that like to top theirs with a dollop of sour cream. This recipe looks really good. I love your additions to make it a bit more filling.

    I do taco (beef) soup occasionally. Also a chicken version. I’ve not seen those bagged veggies. I do add corn and black beans but I prefer to saute my onion and pepper.

    Hubby and my kids love Mexican….I really enjoy a Fajita but I don’t do, black beans and all the other thingies….I am a fussy sort. We have a place here we love called Border Cafe…everything is fresh and made from scratch….their Cadillac Fajitas/Beef are AMAZING you can cut the meat with a fork…so tender….YUM

    I think this soup would be a hit with the fam….will have to try and let you know…. thank you !!!!

    Made your chicken wrapped in dough….used Feta cheese, drizzled oilive oil on top and just a smidge of garlic powder (I am a HUGE garlic lover)….it was fantastic….

    Rhoda…..here in Texas, tortilla soup is a staple! There’s a great “mom & pop” Mexican restaurant around the corner from my studio. I’m there at least a couple of times a week, and they have the best tortilla soup ever…although, the flautas are my favorite lunch item. Not good for the waistline, but so yummy. Viva la sopa !

    We love Mexican at our house! I put black beans and mexicorn in just about everything I can that is Mexican. Mexican rice is even yummy with bell pepper, onion, black beans, and mexicorn added. The fam loves it. I’m going to put this soup on the menu for next week. Yummmm…..
