Mom has had this cake in her recipe arsenal for a long, long time now and it is really popular around her church friends, as well as family. This cake has made the rounds, being baked for church events and us for many years now and itโs a family favorite as well. It has pineapple and mandarin oranges, so you know itโs good. The icing is light too so itโs not a heavy cake.
When I asked her to dig out the recipe, this is what she brought out, so you can tell this one was clipped many years ago. It came from a magazine called Farmerโs or something like that. Iโll add the recipe to my recipes here so you can print it off below.
She baked this one at home recently, so I decided I needed to share this one with all of you too. I know youโll love it as much as we do!
It uses a store bought cake mix and then you add to it, so itโs easy to make and the added ingredients makes it extra delicious.

Delicious Orange Pineapple Cake
Ingredients
- 1 pkg. Dunkin HInes Butter Recipe Golden cake mix
- 1/2 cup soft butter
- 3/4 cup whole milk
- 3 whole eggs
- 1 can 11 oz. mandarin oranges, drained
- Hawaiian Icing:
- One bowl cool whip 12 oz. standard size
- One Can crushed pineapple 15 oz.
- One Box instant vanilla pudding mix
- Mix All in a bowl and ice cake.
Instructions

Prepare 3 nine-inch round cake pans. Oil lightly bottom of cake pans and sprinkle with flour. Shake out excess flour.

Put all above ingredients in large mixer bowl. Blend until moistened. Scrape bowl and beaters. Beat at medium speed for 3 minutes. Do NOT overmix. Pour batter into 3 prepared pans. Bake at 325* for 25 minutes in preheated oven.

Cool cake in pans for 10 minutes. Turn out and cool top side up on rack. Stack when fully cool and Ice with Hawaiian icing.
This recipe looks good. I want to make but have a question. Can you make it in a 9 X 13 cake pan? I prefer that size. I’m not the best layer cake baker. : )

I make it in a single layer (9 x 13) – have never layered it – and it turns out great. Would love to try layering it, too, but have never been successful. Not quite sure what I do wrong, but my layers are always uneven. haha! Thanks again for sharing, Rhoda!
Made per the instructions for my oldest daughters birthday. It was good, absolutely no problem. A week later I made it again only put it in mini-cupcakes and some standard. The cakes came out with beautiful rounded tops. As I was preparing the frosting all the cakes fell. They tasted great…what did I do to cause them to fall..The became externally stuffed cup cakes… they were good John
HI, John, glad you tried it a couple of times. Not sure on the cupcakes why they fell, but you can always practice again. At least they tasted great!
I had this pinned for my sons baptism-and the time is finally here to make it!! Quick question- once iced does the cake need to be kept in the fridge due to the cool whip icing? I know it wont last very long-but it might last a day or two. Thanks
Carrie, that is probably a good idea. I think my mom does refrigerate it.
I made it again, however I used a Betty Crocker strawberry cake mix, replaced mandarin oranges with 3/4 cup finely diced strawberries. On the frosting I pureed just under 2 cups of fresh strawberries, jello brand strawberry pudding and a 12 Oz generic cool whip. Turned out great, not much left.

I made BBQ pulled pork this morning. Just took the Pig Pickin cake out of the oven. I’ve never made it before. I did use a 9by13 sheet cake pan and watched bake time carefully. 25 minutes on the dot. My son will be home for the weekend tomorrow night. Hubby returns from 2 weeks on the road. I’ll make cole slaw & sweet tea tomorrow… It’ll be a finger licking good time!! All the ingredients in a bowl? Seems like there are frosting ingredients in that list. should they be separated and not included.

Oh my Rhoda! This cake looks terrific!!! My mother probably would have loved this cake as well. After four years of living on Oahu in the 1970โs with my dad stationed there with the USAF, Mom likes to bake pineapple upside down cakes, coconut pineapple Jello salads and such forever!
