My mom loves trying new desserts and she found this one recently in Country Woman magazine and whipped it up for my dad. I got in on it too when I was over there eating with them and it was delicious. I posted a quick snapshot of my slice of pie on my Facebook page and boy, did it get lots of comments. Apparently a lot of folks love pie.
Many of you asked for the recipe, so here it is!
Instead of posting the recipe here, I’m going to direct you to Taste of Home recipes and it’s all over there, ready to print! This particular recipe came from Betty Kay Sitzman, in Wray, CO and it really is a good one, so enjoy!
The only thing different that my mom said she did was on the step 4 that says to add hot water to egg yolks, she didn’t do that. She said she put the egg yolks in a separate bowl and then beat them with a fork. She then poured it in the other sugar mixture and used a whisk to blend all of that together. Other that that, she followed the directions precisely. Oh, and mom doesn’t make her own pie crusts anymore, she just buys them, but there are a lot of good store bought pie crusts out there now.
Here’s the slice that started it all! I hope you’ll try it yourself, it really is so yummy and we devoured it in no time. My mom has always been a dessert maker and my dad has such a sweet tooth that she tries to keep him happy by making homemade sweet treats. I love to get in on that too!

Mmmm….your mama’s a treasure! When I was growing up, we had homemade pie every week and coconut is my daddy’s favorite. Thanks for this recipe; next time he visits, I’ll make it.
Your sweet mama is definitely a Proverbs 31 woman. She does it all and she does it all well! That slice of pie looks like it just walked off the pages of a magazine. Even with a store-bought pie crust, my pies never come out looking like that! Guess I will have to practice more with this recipe. Thanks for sharing!

Well, coconut custard is my favourite, so I’m sure I’ll love this. I didn’t see anywhere about adding hot water, just tempering the egg yolks. I’m guessing she didn’t do that and just added it all together before heating it.
I still make my own crusts…it’s the best part and I’ve found the store bought ones good, but not great. It’s not that hard and I usually make a few and freeze them. The [re=made are nice for last minute creations and I generally keep the rolled ones in my fridge. I so love the recipes you share. Thank you and your mom.I know what I’m making this weekend!
