Paleo Chicken Tortilla-less Soup

We are cooking up some soups around our house these days, with the winter weather settling in.   Wintertime just calls for soup, doesn’t it?  There’s nothing better to warm the bones than hearty soup.  My roommate, Rhonda, found this one online recently and tried it out. It made a big ole’ pot of chicken soup and we’ve been eating on it for a few days.  Delicious, hearty, and tasty, this is a good one and it’s Paleo too, for those who don’t eat grains. This one doesn’t have tortillas, but of course, you can add them on the side if you want.  I did!

I’m going to send you over to the website to print this recipe, but the key ingredients are chicken, garlic, jalapeno peppers, poblano peppers, chicken stock, roasted tomatoes, cilantro, lime juice and avocado as a garnish.  Sounds good, doesn’t it?

It really is a tasty soup, so if you’d like to try it, click over to Paleo Comfort Foods and print off the recipe for Paleo Chicken Tortilla-less Soup for yourself.  I won’t duplicate it here, since they already have it ready to go.  You may have to copy the text and paste it to a Word doc to print it out.  I didn’t see a Print it button.  Wanted to credit the source of this delicious soup and hope you’ll try it if you are in the mood for some comfort food this time of year.

I love trying out new soups this time of year and this one is a winner.  With a dollop of sour cream, a little grated cheese and chunks of avocado (not shown here), it’s a one dish wonder and so delicious!

    I made this for dinner! I roasted a poblano pepper and used roasted cumin, smoked paprika, and ground coriander! I added a can of white beans. This was oh my goodness good. I left the lime on the side! I’m soooo excited I can eat leftovers for lunch!

    This sounds great – I’m going to give it a try. I’m curious if you used Knorr chicken stock when you made it. I first tried Knorr stock when I won it in one of your giveaways a couple of years ago, and I think it is so much better than canned and bouillion cubes. Thanks again for the goodies!

      Hi, Kim no we didn’t use Knorr in this one, but you are right, I still like Knorr chicken stock too.

    Being an Aussie I am not sure what a poblano pepper is !!! I t sounds like a lovey chicken soup ..

    I’ve been wanting to try this recipe and finally got around to it last night. You are right, it is so delicious! I didn’t plan to do it this way, but it turned out that I had three roasted, boneless-skinless chicken breasts that were left over from another meal, so I heated them up while I was preparing the other ingredients for the soup. That way it didn’t take long to finish everything and get it on the table. (I kind of ditched the Paleo idea though, because I served it with cornbread muffins! 🙂 Thanks so much for this recipe!

    This recipe looks wonderful and I will certainly try it as well as pass it on to daughter with celiac hubby as well as the other who’s finding living without wheat more comfortable for her whole body. Thanks so much!!
