This is a quick and easy sandwich meal that I cut out of Southern Living a long time ago and just got around to trying. And it was great! We loved this one. For summertime, when you want something a little lighter than normal fare, this is the ticket.
Warm Prosciutto-Stuffed Focaccia
1 (9 ounce) round loaf focaccia bread
3 oz. thinly sliced prosciutto*
4 oz. thinly sliced Muenster cheese
1 (6 oz.) pkg. fresh baby spinach
1/4 cup bottled roasted red peppers, drained
2 TBL light balsamic vinaigrette
Cut bread in half with serrated knife. Top bottom bread half with prosciutto & next 3 ingredients. Drizzle with balsamic vinaigrette, cover with top bread half. Wrap in aluminum foil; place on a baking sheet.
Bake at 350* for 15 minutes or until warm. Cut into wedges.
I used some flat sheets of focaccia bread that I found at Walmart’s bakery, so use what you can find.
*Prosciutto is kind of expensive, so if you want, substitute deli ham for this, although it won’t have exactly the same flavor. Prosciutto is Italian and has a really distinct flavor and really makes this great, but you could easily do ham too. It doesn’t take much prosciutto to do this and Publix carries it in the deli.
Hope you’ll try it, we really did enjoy it and I’ll definitely do it again!

Tonight, to celebrate my hubby’s birthday, I’m taking him to see a new play in town, Bear Country, in honor of his beloved Bear Bryant. I love to come up with ideas that will be just right for him and this one definitely is. 🙂 I’m so proud of him too, since he turned 50 this birthday, he’s going on a major diet and has determined to lose 40 (maybe more) pounds. I’ve been hoping for this to happen and will do everything I can to help. He’s got a closet full of some gorgeous clothes that hopefully he’ll be back in before too long. Go hon!

the sandwich looks delicious – I must try it! And have a good time with your hubby……boy, I wish my husband would take a page from your husband’s book. I love him and want to keep him around a good long while, but I can’t nag him about his weight. The motivation has to come from within himself, and that is what I’m patiently awaiting.

That looks sooooo good Rhoda! It’s times like these that I hate that I am gluten free. Although, if I want it bad enough, I’ll adapt it to a bread that I can eat.
