Recipe Party: Pasta All’Amatriciana

Recipe Party

Are you ready for some new recipes today?  Hope you got some of your favorites together to share with everyone.  I am looking forward to gathering some new ideas for meal planning.  Time to add to the list and break out of the meal routine rut!
Pasta

I think I had this when I was in Italy about 20 years ago and our local favorite Italian restaurant here in Birmingham also makes a version of this and I just love it.  The boldness of pancetta (Italian bacon) makes this dish really flavorful and good.  I use my mama’s canned tomatoes, but you can use whatever you have on hand, but this is an easy and delish dish!

    Pasta All’Amatriciana

4 oz. thick sliced pancetta (Boars Head make pancetta & I only got 1/4 lb)

1 TBL olive oil

1/2 cup chopped onion

1/4 to 1/2 tsp. red pepper flakes

1 can (28 oz.) whole tomatoes

1/2 tsp. salt

1 lb. rigatoni or spaghetti, cooked

Freshly grated Parmesan cheese (or Pecorino-Romano)

Heat oil in skillet over medium heat, add pancetta and cook until beginning to brown, 4 to 5 min.  Add onion and pepper flakes, cook, stirring, until very tender, 5 min. more.  Add tomatoes and salt, cook, breaking up tomatoes, until sauce is thick, 20 min. more.  Toss with cooked pasta, serve with cheese.

Really, pancetta is so flavorful (so you don’t  need a lot, only got 1/4 lb. from the Boars Head deli counter) with the onions and this is tasty and delish! I think if you are a pasta lover, you will really enjoy this.  And it’s fast and easy!

    Terry, you are cracking me up this a.m.! Boars Head is a deli brand of meats. We have them at our local Publix and to me, they are the BEST deli meats around. They have pancetta & I only got 1/4 lb (it’s about $11 or 12 a lb.) and it is so flavorful that it was plenty for this dish. I added in my mom’s quart jar of tomatoes. The pancetta & onions together are amazing.

    Well that sounds fantastic Rhoda….and I so agree about the Boars Head….they really are the best !!!

    We are in for a very rainy day on sat….so I know I will be sitting down and reading all the wonderful recipes….I need me some new ones….I am sure I am like most making the same old same old again and again….

    I found you today while blurfing, I just did my first recipe post, but I am not a measuring kind of cook, and I do use “convenience” foods alot since I work and no one else in my house seems to know how to turn on an appliance, but I still turn out “homemade” dinners 6 days a week with the family and a few extras for dinner together. That is the important part right? I am going to go click on a few of your links and look for more great ideas for dinner time duldrum breakers. Thank you for having this post. Karyn
