Seared Cod with Blue Apron

Preparing meals is one of those things that constantly rolls around, day after day.  How’s your meal planning going?  I have to confess that I don’t do a great job of meal planning for just me, but tend to graze and make simple things at home. My roommate and I do take turns and prepare a few meals each week, but with our schedules being different, it doesn’t always work out to cook together.  Plus, she eats a more restricted diet than I do.

I’ll be working with Blue Apron again this year sharing some of their fresh and tasty meals with all of you.  I am never disappointed when I get those boxes delivered to my front door.

I really do think that a meal service like this is good for so many folks.  Working families have limited time for grocery shopping and meal prep, so this service takes the step of grocery shopping out of the mix.  No one wants to eat out all the time either.  I know many families get in the habit of grabbing food out on the go and that can really add up in expense too. Not to mention, most of that food isn’t good for you.

Plus, half the battle of cooking at home is figuring out WHAT to prepare and then going to the grocery store for all the ingredients. I love the fact this this is fresh ingredients, made from scratch and it’s not hard to prepare at all. If I can do it, anyone can do it!  I love seeing new and different ingredients in the box that I’ve never tried before.

My first meal out of the box was Seared Cod with Date Vinaigrette and this was one delicious meal.  As you can see, all the ingredients are included for a meal for 2 or 4.

All the ingredients are packed in a super cold box on ice with everything you need for 3 meals that week. You can choose from a selection of meals offered for that week online and get those things that appeal to you. And you can choose meals for 2 or 4.

Each menu is between 500-700 calories per person, so these are healthy well-balanced meals too.

Ingredients are super fresh and sourced from quality local suppliers and artisans.

All meals can be prepared in 40 minutes or less. (love this part!) As you will see in the pictures, all the ingredients are well marked for each recipe and the bags have handy tags on them identifying what goes with what. The only thing that is not included is olive oil and salt and pepper. They figure you have that in the pantry.

Once you try a few of these meals, you’ll then feel more confident to get out of the same old dinner rut you’ve been in. Or go out to eat less often. I can definitely relate to that. I’ve got so many recipes laying around that I’ll never cook again.

This meal was fresh cod fish served with a spinach salad mix.  Inside the Knick Knacks bag is the measured ingredients ready to cook with.

New to me on this meal was Medjool dates, which gave the spinach salad a little bit of sweetness and mixed well with the cod.

Preparing the vegetables and side dishes is no harder than washing the produce and chopping it all up.  The detailed recipes show all the steps to take in a concise and easy manner to follow.

Washing the rest spinach salad.  Once it was all mixed together and the cod seared in a pan for just a few minutes, it’s time to plate your meal and eat!  The best part of the day!

The Seared Cod dish was super tasty and delicious and with the addition of quinoa, also healthy. This was my first time cooking quinoa, but it was a really nice mix with the spinach and onion mixture, along with oil and vinegar.  We definitely loved this dish and I’ll keep it around for an encore dinner later on.

I also loved this Asian soup, Udon Chicken Noodle soup.  It was so delicious and good!

      UPDATE: Our first meal was fabulous! Chicken Scallopini. It was complicated at first because it was my first meal and not knowing the recipe. Everyone loved it!

    These guys are great! We had their Buffalo Chicken Sandwich recipe last night; was enough for a lunch left-over, too.
