What’s for dinner is one of those well rehearsed questions that most of us have heard once or twice or more.  Cooking dinner is one of those tasks in life that rolls around way too often.  Why must we eat three meals a day?  Somehow we were made that way and our tummies growl and tell us when it’s time to fill them up once again.
So, to save money and not go out to eat all the time, we opt to cook at home most of the time. Â I’m sure you’re in that same boat with me. Â I’ll admit, I don’t cook every single night anymore. Â My roomie and I do take turns cooking a couple of times a week and it’s nice to go back and forth on that and enjoy the other one making a meal and cleaning up. Â It’s always nice to get a break from cooking, but cooking at home definitely saves money and allows us to know exactly what we are eating.
Today, I’m back with another round of Blue Apron meals. Â I was really impressed when I tried out this Blue Apron service for the first time well over a year ago. All the ingredients are packed in a super cold box on ice with everything you need for 3 meals that week. You can choose from a selection of meals offered for that week online and you can choose meals for 2 or 4 people.
This meal is Adobo-style Chicken with Roasted Bok Choy and Jasmine Rice. Â It was a tasty Asian inspired dish.
Some facts to know about Blue Apron meals:Â
Each menu is between 500-700 calories per person, so these are healthy well-balanced meals too.
Ingredients are super fresh and sourced from quality local suppliers and artisans.
All meals can be prepared in 40 minutes or less (love this part!). As you can see above, all the ingredients are well marked for each recipe and the bags have handy tags on them identifying what goes with what. The only thing that is not included is olive oil and salt and pepper. They figure you have that in the pantry.
Once you try a few of these meals, you’ll then feel more confident to get out of the same old dinner rut you’ve been in. Or go out to eat less often. I can definitely relate to that. I really need to clean out the old recipe files and toss recipes I’m never going to make.
Each meal comes with a Knick Knack bag with small pre-measured ingredients inside. Â These are things you might not always have on hand.
Once all the ingredients are sorted out, it’s time to prep. Â It’s not so bad and requires some chopping and dicing, but overall it’s a fast process to get dinner on the table. Â I always look forward to my Blue Apron meals.
Bok Choy is something I’ve never cooked before, so one of the things about this meal service is using some new to me ingredients. Â This gets roasted in the oven while I’m preparing the meat and is ready after about 10 minutes of roasting.
Sauté the chicken and onions to get this meal moving along.  Rice is simmering as I’m cooking this part.
The chicken and veggies are ready in no time.
Then the liquids are added for flavor and cooked down.
Once the rice was cooked, it was time to dish up a delicious Adobo Chicken plate. Â I invited our friend, Karen, over to eat with us that night and she was happy to drop by for a delicious Blue Apron meal. Â I don’t have to talk anyone into eating with us.
I also cooked this salmon dish for my guy, Mark, and he loved the meal we had. Â Men like a good home-cooked meal! Â Those are purple potatoes, by the way, which I’ve never cooked before. They were very good with the onions. The link for this salmon recipe is just below.

We started Blue Apron about 5 weeks ago and we LOVE it! We were in such a rut eating the same old things week after week. There has only been one meal that I didn’t really care for which are great odds. We are making the salmon with purple potatoes on Friday. Can’t wait to try it!
One of the things I like is that other subscribers post tips and ideas on the BA website. It has been very helpful to learn a few tricks before attempting the recipe.
Hi, Betty, I’m glad you are enjoying Blue Apron, it is nice having variety on meals.
We just tried it for the first time and I didn’t fall in love. I don’t like that Blue Apron has such time intensive recipes. What they sent to us was delish! It does come packaged perfectly. But, I just didn’t like that it took 1.5 hours to make one dish. I am going to take the recipe and see if I can make it easier. Blue Apron makes you step out of your comfort zone. I love that. If I lived in a city like NYC I’d be all over Blue Apron every single week. It would be a deal! But, when you have kids to get through homework, after school activities, bed time, bath time, Blue Apron I think can be hit or miss. If it was just me and hubby I wouldn’t be so worried.
HI, Nicole, thanks for the feedback. I know that some things do take more time and others don’t. The prep part is definitely the most time constraining part of it. And after cooking many meals with them, I’ve enjoyed most of them for sure. I can see why it would be harder if you have kids and cooking for 2 would make it easier. Cooking a meal is never totally prep free and the part I love the most is pre-measured small items that go in.
