Pork Chops Ole

My mom passed this recipe on to me and it’s really tasty.  Hubby loves it.  In fact, we both love anything with green peppers and onions.  And cheese.  Don’t forget the cheese.  Comfort food at its best.  This is a good dish for those cool  evenings. Ignore that blood seeping out, it will cook down.

Start off by pan browning your pork chops.  I used 4 pork chops the first time I made this, but only 3 this time.  So you can add more or less.

I use brown rice all the time for my rice recipes, so I cooked the rice ahead of time, since it takes about an hour to cook brown rice.  I used about 3/4 to 1 cup uncooked rice and it fills up a 9×13 pan.   Adding the tomato sauce and taco seasoning.IMG_7010

Layer the pork chops on top.IMG_7012

I sauteed the chopped peppers and onion in a pan first to cook them down, then layer on top.IMG_7013

Add some cheddar cheese on top.IMG_7015

Bake about 45 minutes and this is what you get.IMG_7017

Cheesy, taco flavored pork chops.  And they’re good!  Ole! :)   Sombrero optional.

Pork Chops Ole

4 to 6 pork chops (boneless or bone in)

2 TBL cooking oil

Salt & Pepper

3/4 cup rice (cooked)

1 small can tomato sauce

1/2 envelope taco seasoning

1 med. green pepper chopped

1 med. onion chopped

1/2 cup shredded cheddar cheese

In large skillet, brown pork chops in oil, sprinkle with salt & pepper.  In 9×13 pan, combine rice, tomato sauce, and taco seasoning, mix well and layer on bottom.  Place browned pork chops on top, add sauteed peppers and onions.  Sprinkle cheese over top.  Cover and bake for about 45 minutes on 350*.

I think you could easily use chicken breasts with this dish too and it would be equally good.  I’m going to try that too.

looks yummy. My mom made something similar. She would brown the pork chop and put a ring of onion and green pepper over the pork chop. Then she would pour a can can of tomatos over the top and serve it on a bed of rice. We loved this growing up.

You’ve done it again! I don’t love to cook, and am less interested in blog posts with recipes than I am in those with crafts and home dec. And yet, you’ve given me a recipe I’ll likely try…. My family loves all the stuff in this recipe, and I usually have it all on hand. I usually don’t cook my brown rice longer than 30 min., which makes the recipe all the more do-able on a weeknight. Guess I’ll just have to try it.

If Rhoda says it’s good… i’m trying it! Never had cheese on top of pork chops before…. but trusting you have come up with a new way for us to enjoy them, I will give it a whirl…. certain it’s good with chicken as well! thanks for another super idea for the winter doldrums!

brown your pork chops.
Throw in the crock pot with one can cream mushroom, one can golden mushroom, one soup can milk, one envelope onion soup mix, small can mushrooms. Cook on low all day.
Use the gravy to serve with mashed potatoes.

This one makes my husband moan.

Chris, I went back & revised the recipe to one can SMALL tomato sauce, I’m sure that’s the size I used, since that is what I always buy. That should be plenty to mix up with the rice and taco seasoning.

Hi Rhoda,

You know how we love your recipes, but at first, this one just did not appeal to me. Then I started scrolling down and down, then got to the peppers, then melted cheese and yummy!
I would probably switch to yellow and red peppers to add colors and vitamins. The guys don’t like peppers of any color but DH and I do! Can’t wait to try this one.

My husband made your porkchop recipe tonight while I was exercising. We didn’t have brown rice so he used white; we didn’t have tomato sauce so he made his own with canned tomatoes, and he used 1 1/2 cups cheese! It was tender, spicy and delicious. We’re always looking for good recipes for porkchops and this is fabulous. Would make a good company dinner, too. Thanks for sharing it, Rhoda.
