Deep Dish Mexican Meat Loaf Pie

This one might sound a bit strange, but it really is absolutely delish.  If you love Mexican (and we do), then you should really enjoy this one.  It’s a one dish wonder and you gotta love that.  Put it all in one pan, bake in the oven and add some tortilla chips to the mix.  A nice tossed salad would be a healthy side for this one too.I spotted this one in my Better Homes & Gardens mag. They usually have some good, family friendly meals, so I’m always on the lookout for a good one.  This one fits the bill.  Hubby loved it too and it didn’t last long at our house. I made it in a glass Pyrex deep dish pie plate.

Deep-Dish Mexican Meat Loaf Pie

1 1/4 lb. ground beef (90% lean)

1 cup finely crushed tortilla chips

1 envelope onion soup mix

3/4 cup bottled taco sauce

2 eggs, lightly beaten (divided)

1 8.8 oz. pouch cooked Spanish-style rice (Uncle Ben’s ready rice)

1 15.5 oz. can golden hominy rinsed & drained(OK, I used canned whole corn instead)

1 14.5 oz. can diced tomatoes with green chilies, drained (Rotel is great!)

1 cup shredded pepper Jack cheese (4 oz.)

1 medium fresh Anaheim pepper, seeded & chopped

1/4 cup chopped fresh cilantro (optional, I didn’t add it)

Tortilla chips on the side

1.  Preheat oven to 350*.  Combine beef, crushed chips, soup mix, 1/2 cup of taco sauce, one lightly beaten egg, and 1/2 tsp. black pepper.  Press into bottom & sides of 10-inch deep dish pie plate.

2. Heat rice according to directions. In bowl combine rice, hominy (or corn), tomatoes, cheese, Anaheim pepper, cilantro & the remaining 1/4 cup taco sauce & egg.  Spoon into meat shell.  Place on a baking sheet.  Cover loosely with foil.

3.  Bake 40 minutes.  Remove foil, bake 20 minutes or until an instant-read thermometer registers 160* F.  Cool 15 min.  Top with chips, jalapeno & cilantro.  Makes 6 servings.

Again, it really was a hit with the 2 of us.  The flavors really melded together well and I’ll definitely be making it again.

    Wonder how long it would take for me to get from my house in NC to your house for the yard sale? Wow, that sounds like fun! Too bad I am so far away. You gals will have the best stuff.     That sounds like a great dish to add to my family reunion menu! It’s going to be Labor Day weekend and we’ll have a house full so one dishes are perfect.

    Wish I could make the yard sale but I’ll be down in Middle Georgia for a birthday bash. Sounds like fun and I hate to miss!!

    Thanks for sharing such a wonderful recipe. As much as my kiddos enjoy Mexican food, I am sure this will be a hit!

    I am having one the first weekend of September, and it’s a lot of work to put one all together! I may get a little adventurous and head your way on the 11th.

    Oh my…you are mixing all my favorite things. I do something similar but have not done it in a deep dish. YUM! And you are just SO MEAN to be tempting me with the yard sales of all yard sales. WAHHH! i am jealous. That’s all. Just saying…JEALOUS! 🙂

    Who wouldn’t love a one pan recipe, I sound like Ina…..I wish I liked Mexican more, love me a Fajita though …but I am such a fussy fart I don’t do sour cream, guacamole, salsa, taco sauce etc….I should be a stick I am so fussy I always have to tweak a recipe….. like this one I wonder if I could use tomato sauce instead of the taco….???

    I have a recipe for you though page 204 of the new BHG ‘ the tomatoes ‘ OMG Rhoda they are fantastic….I don’t like goat cheese (see fussy I tell ya) so I used Feta instead and I nixed the mint….. anyway give it a try it’s really good !!

    How is Eleanor……I would love an Eleanor Post she cracks me up !!! Pls tell her hello 🙂
