Spinach and Cheese Lasagna Roll-ups

Here’s another good recipe that’s a bit of a twist on lasagna…(ha-ha, rollups!)   I made this recently and we really enjoyed it and it has spinach, so that’s an extra plus.  You can adjust the recipe to make more or less and I didn’t use a whole lb. of lasagna noodles, but only 6:

Spinach and Cheese Lasagna Roll-ups

15 oz. ricotta cheese

1 10-oz. pkg. frozen spinach (I used fresh & steamed it first)

1 egg

1 TBL parmesan cheese

1/2 tsp salt

1/2 tsp pepper

1 lb. lasagna noodles

1 15-oz can tomato sauce

1 TBL parmesan cheese

Combine ricotta cheese, spinach, egg, Parmesan, salt & pepper.  Cook lasagna noodles in boiling water until done. Spread with spinach mixture and roll up.  Place seam-side down in 9×13 in. baking dish.  Top with tomato sauce and sprinkle with Parmesan cheese. Cover and bake at 350* for 30 to 35 min.

I made my regular homemade spaghetti sauce for this, instead of just using a can of tomato sauce and also added a little extra cheese on top when I baked it.  We really loved it and it’s a keeper too!

    Perfect! I have a package of lasagna noodles in the fridge. Just need to pick up some ricotta! I wonder if I could add mushrooms or eggplant to make it more hearty. I’m trying to get my husband to eat more meatless meals!

    I love fresh takes on traditional food, especially Italian food! These look so good! I’ll have to try them. I love spinach!

    This dish looks scrumptious and I can taste it already!! I would like to ask a question about your zebra placements – did you make them – if yes where did you get the fabric and is it washable – or did you purchase them. do you think they would look good with blue and white dishes??

    Hi, Carrie, those placemats were yardsale finds & I think they came from Pier One,although it’s been a few years, so they may not have them anymore. I’m not sure they would look that great with blue and white dishes. If I were you, I’d go for something in the gold family to accent them. You might go for a gold or brown zebra or leopard print, which might accent your dishes better.
