Spinach and Cheese Lasagna Roll-ups

Here’s another good recipe that’s a bit of a twist on lasagna…(ha-ha, rollups!)   I made this recently and we really enjoyed it and it has spinach, so that’s an extra plus.  You can adjust the recipe to make more or less and I didn’t use a whole lb. of lasagna noodles, but only 6:

Spinach and Cheese Lasagna Roll-ups

15 oz. ricotta cheese

1 10-oz. pkg. frozen spinach (I used fresh & steamed it first)

1 egg

1 TBL parmesan cheese

1/2 tsp salt

1/2 tsp pepper

1 lb. lasagna noodles

1 15-oz can tomato sauce

1 TBL parmesan cheese

Combine ricotta cheese, spinach, egg, Parmesan, salt & pepper.  Cook lasagna noodles in boiling water until done. Spread with spinach mixture and roll up.  Place seam-side down in 9×13 in. baking dish.  Top with tomato sauce and sprinkle with Parmesan cheese. Cover and bake at 350* for 30 to 35 min.

I made my regular homemade spaghetti sauce for this, instead of just using a can of tomato sauce and also added a little extra cheese on top when I baked it.  We really loved it and it’s a keeper too!

    These look delicious! I used to make these when first married but the kids turn their noses up at spinach and most anything green. Next time it’s just my husband and me….I am making these! They look great. Thanks for the recipe!

    Oh YUM!! I’ve made lasagna roll-ups but they did not have spinach. These will be yummy, I’m sure! I make my own pasta sauce also. This past summer we had SOOOO many tomatoes that I made up some sauce and froze it. We had some just last week. You’re right, it’s so much better! And pretty easy. I missed your post before about your sauce – glad you linked it. My recipe is a bit different, but pretty similar.

    Ooooh I’m craving italian now! Thanks for the recipe.

    Princess House use to have this recipe in their Nouveau cookbook many years ago. It is a great way to get your kids to eat their veggies when they are younger. Everyone is reminding me of how great the “old days” were. Thanks for sharing and I am going to have to add this to my Monday Menu Planner.

    Yummy…I can’t wait to try this! I like the tip of using fresh spinach and steaming it. I’ve used the frozen stuff and it’s too watery.
