Sweet Potato Fries!

My Dad absolutely LOVES sweet potatoes and since he loves them so much, he also grows them.  And we’re not talking wimpy little potatoes, I mean, they’re HUGE!  And just because they are huge doesn’t mean they aren’t sweet and tasty.  They are.   The huge ones are great for baking up with a little butter, brown sugar, and cinnamon.  IMG_7982

But the smaller ones are perfect for slicing up for home fries in the oven.  Scrub well, slice them up in strips, drizzle a little olive oil on top. IMG_7983

And add our favorite Cajun seasoning, Tony Chachere’s, a staple in my kitchen cabinet.  Do you love this stuff?

Bake at 400* for at least 45-50 minutes and they will come out nice and crisp, perfect with a little ketchup on the side.

Try them and see if you don’t agree!

Adding this to Jen’s Tasty Tuesday party.

Some of you  may have missed the Pretty Knobs post below, since it did not get published as it should have in your feed readers for Monday.  So, scroll down if you missed it! I’m tiling away this week. 🙂

LOVE sweet potato fries, though never tried them with that seasoning. We use cinnamon and paprika and mmmmmmm so very good!! I even got my husband, who “hates sweet potatoes” (but had never tried them). Ha

We love sweet potato fries at our house! I sprinkle a little cinnamon on mine before baking. BTW, what’s the deal with sweet potatoes lately? I’ve been to the store twice and haven’t seen any!

Oh my word, Rhoda!! Those look amazing!! I’ve tried to do the fries before, I think maybe I didn’t slice them thin enough b/c they took forever to cook and they still didn’t turn out the way they do at the restaurant. I’m going to give it another go and try your version. 🙂
