Southern My Way Cookbook Giveaway

Raised in South Georgia’s farm country, cookbook author, Gena Knox has a long history with the land and Southern cooking.  Her newly released cookbook, Southern My Way: Simple Recipes, Fresh Flavor, features more than 250 pages of seasonal recipes (100+ recipes), streamlined for busy lives and accompanied by full-color photographs that portray a lifelong love affair with Southern food and culture. Gena shares her modern take on the region’s culinary specialties.
Says Gena,

“I want home cooks to read my book and feel as though they shared the same culinary experiences that I did as a child, like riding through the fields to check on crops with my father or making homemade biscuits alongside my mother in the kitchen.”

Sounds very similar to the way I grew up.  We didn’t ride through the fields, but walked through my parent’s garden plenty of times, freshly picked veggies at the ready.

With a contemporary spin on Southern cooking, Gena’s recipes rely on fresh, seasonal ingredients to make them work with little trouble.     Rhoda, I get great pleasure, after 52 years, when I turn that iron skillet over and out falls the perfect pone of cornbread. My husband looks at me and smiles and it don’t much matter what else we have on the table. Cornbread goes with just about everything.

    My favorite meal to cook for family is a Chuck Roast, with creamed potatoes and cream gravy! Such comfort food for us!

    Fried green tomatoes! My grandmother used to make them for me whenever I went over to her house. I remember them being so good. I made them this summer for my family and it was love at first bite. I was really surprised that my hubby liked them seeing as he usually doesn’t like fried foods. I guess it just goes to show you that you can’t turn down a good fried green tomato!

    Hmmm Maybe chicken pot pie or homemade pizza. My son has been a missionary in Georgia and is coming home this summer. I need to learn some southern cooking skills…

    The recipe my family loves the most is my lemon chicken. It is boneless chicken breasts pounded thin, dipped in beaten eggs and a little milk and salt and pepper. You then bread the chicken breasts in crushed soda cracker crumbs, and sprinkle with parmesean cheese on both sides. I pan fry them in butter and squeeze fresh lemon juice over them. I serve this with mashed potatoes and fresh green beans with slivered almonds which are lightly sauteed with butter, seasoning salt, and a little lemon juice.

    My family loves it when I make lasagna, you should see how happy they are when I tell them that is what we are having for dinner served with salad and homemade ranch dressing. You can’t get homemade tasting lasagna it’s homemade. It’s time consuming to make so I don’t make it very often, but I should because it makes them so happy.

    Oven-Fried Chicken! My grandparents were from Monroe, North Carolina, so I grew up a little bit like that. Love Southern cooking and recipes.

    Oh my, I don’t know if I can decide one favorite dish. I love making breakfast on Saturday morning with buttermilk biscuits and sausage gravy.. One of hubby’s favorite meals is salmon patties and fried potatoes. My favorite is country fried steak with gravy and biscuits. O.K., going to go with the buttermilk biscuits!!
