Southern My Way Cookbook Giveaway

Raised in South Georgia’s farm country, cookbook author, Gena Knox has a long history with the land and Southern cooking.  Her newly released cookbook, Southern My Way: Simple Recipes, Fresh Flavor, features more than 250 pages of seasonal recipes (100+ recipes), streamlined for busy lives and accompanied by full-color photographs that portray a lifelong love affair with Southern food and culture. Gena shares her modern take on the region’s culinary specialties.
Says Gena,

“I want home cooks to read my book and feel as though they shared the same culinary experiences that I did as a child, like riding through the fields to check on crops with my father or making homemade biscuits alongside my mother in the kitchen.”

Sounds very similar to the way I grew up.  We didn’t ride through the fields, but walked through my parent’s garden plenty of times, freshly picked veggies at the ready.

With a contemporary spin on Southern cooking, Gena’s recipes rely on fresh, seasonal ingredients to make them work with little trouble.     Meat loaf, mashed potatoes, creamed corn, black eyed peas, sliced tomatoes and cucumbers, corn bread and to wash it all down. SWEET TEA! Southern comfort food!

    The dish that I make the most for special occasions and take the most places is my twice baked potato casserole. I always get asked for the recipe, which there’s not one but I do my best to pass along the how-to’s. It also depends on what phase I’m in: dieting or not dieting. My favorite dish this week is one I made last night, great-tasting, low-calorie, healthy chicken and eggplant parmesan.

    So hard to choose one, but I took a poll from my family… As far as southern food goes, they do love buttermilk southern fried chicken and mashed potatoes with vegetables. Personally, I like my mustard balsamic beef tenderloin with fresh steamed vegies topped with melted Parmesian!

    We’re of Italian descent (my husband is first generation American and my great-grandmother came from Sicily), so my favorite dish to make for my boys is Pasta Fagioli. Yum!

    I’d say southwestern grilled chicken is everyone’s favorite, so I definitely enjoy preparing something that no one is finicky about!
